Carob ice cream

Ice cream has always been the dessert loved by young and old alike. In this recipe we offer you a carob-flavoured ice cream created for us by Master Gelato Maker Antonio Adamo. To recreate it, all you need are a few simple Ciokarrua ingredients!

  • 100 g carob extract;
  • 150 g cane sugar;
  • 200 g fresh cream ((min. 35% fat))
  • 3 g carob seed flour;
  • 50 g egg yolk;
  • 500 g fresh milk;
  • cocoa beans to taste
  1. Put the milk, sugar and carob seed flour in a pot and cook over low heat.

    2. Turn off the heat and add, in this order: the carob extract, the yolks and the cream. Stir the mixture until it is well combined.

    3. Transfer the mixture to the ice cream maker* and churn it until you reach the desired consistency.

    4. You can finish the ice cream with cocoa bean nibs. Simply take the cocoa bean, remove the cascara (husk) and crumble it over your ice cream.

*If you don’t have an ice cream maker, you can simply freeze the mixture into cubes and blend it right before serving.
