Carob pulp contains around 20% polyphenolic compounds, powerful antioxidants known for counteracting free radicals and reducing the risk of degenerative diseases. A good part of these polyphenolic compounds consists of catechins. Laboratory studies conducted on catechins have shown that extracts of carob leaves and pods are able to induce cell death in tumour cell lines after 24 hours of treatment(1).
